I’ve been thinking about the 3D-printed chicken nuggets you were talking about. I read the article and my first thought was Star Trek’s replicators! My second thought was the problem of food insecurity in many places in the United States and the rest of the world. This could be a way to solve that, plus reduce the pollution associated with raising chickens. I think it could be a major advance in food technology – which, of course, is a huge topic going back thousands of years. I meant to add a sentence describing Rachel Laudan – she’s a food historian who has lived on five continents and wrote a book called “Cuisine and Empire: Cooking in World History.” It’s a fascinating book.
I read the show notes too….I listen to the podcast in the car or when I’m walking, and can really stop to write down an interesting recipe or reference so for me, the show notes are really helpful…maybe just Dan doesn’t read them:)
